Shrimp Alfredo Burrito Bites

Ingredients (Makes ~20 bites)

  • 1 lb (450 g) medium shrimp, peeled & deveined
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 4 oz cream cheese (softened)
  • ½ tsp Italian seasoning
  • Salt & black pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 6 medium flour tortillas
  • 2 tbsp olive oil or melted butter (for brushing)
  • Fresh parsley, chopped (for garnish)

Instructions

1. Cook the Shrimp

  • Heat butter in a skillet over medium heat.
  • Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink.
  • Remove shrimp, chop into small pieces, and set aside.

2. Make the Alfredo Mixture

  • In the same skillet, add garlic and sauté until fragrant (30 seconds).
  • Stir in cream, Parmesan, and cream cheese.
  • Simmer until smooth and slightly thickened.
  • Add Italian seasoning, then fold in shrimp and mozzarella. Let mixture cool slightly.

3. Assemble the Burrito Bites

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Cut tortillas into quarters.
  • Place a spoonful of shrimp Alfredo mixture in the center of each piece.
  • Fold sides and roll tightly into mini burritos. Place seam side down on the baking sheet.

4. Bake

  • Brush tops with olive oil or melted butter.
  • Bake for 12–15 minutes until golden brown and crispy.

5. Serve

  • Garnish with fresh parsley.
  • Serve hot with extra Alfredo sauce for dipping.
