Shrimp Alfredo Burrito Bites
Ingredients (Makes ~20 bites)
- 1 lb (450 g) medium shrimp, peeled & deveined
- 2 tbsp butter
- 3 garlic cloves, minced
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- 4 oz cream cheese (softened)
- ½ tsp Italian seasoning
- Salt & black pepper, to taste
- 1 cup shredded mozzarella cheese
- 6 medium flour tortillas
- 2 tbsp olive oil or melted butter (for brushing)
- Fresh parsley, chopped (for garnish)
Instructions
1. Cook the Shrimp
- Heat butter in a skillet over medium heat.
- Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink.
- Remove shrimp, chop into small pieces, and set aside.
2. Make the Alfredo Mixture
- In the same skillet, add garlic and sauté until fragrant (30 seconds).
- Stir in cream, Parmesan, and cream cheese.
- Simmer until smooth and slightly thickened.
- Add Italian seasoning, then fold in shrimp and mozzarella. Let mixture cool slightly.
3. Assemble the Burrito Bites
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Cut tortillas into quarters.
- Place a spoonful of shrimp Alfredo mixture in the center of each piece.
- Fold sides and roll tightly into mini burritos. Place seam side down on the baking sheet.
4. Bake
- Brush tops with olive oil or melted butter.
- Bake for 12–15 minutes until golden brown and crispy.
5. Serve
- Garnish with fresh parsley.
- Serve hot with extra Alfredo sauce for dipping.
