Mediterranean Spinach and Feta Crisps

Ingredients (Makes ~20 crisps)

  • 1 package phyllo pastry sheets (thawed if frozen)
  • 2 cups fresh spinach, chopped (or 1 cup frozen, thawed & squeezed dry)
  • 1 cup crumbled feta cheese
  • ½ cup ricotta or cream cheese (for creaminess)
  • 2 green onions, finely sliced
  • 2 tbsp fresh dill or parsley, chopped
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • Salt & black pepper, to taste
  • ½ cup melted butter or olive oil (for brushing phyllo)

Instructions

1. Make the Filling

  • Heat 1 tbsp olive oil in a pan, sauté garlic and spinach until wilted.
  • Remove from heat, let cool slightly.
  • In a bowl, mix spinach, feta, ricotta/cream cheese, green onions, dill/parsley, salt, and pepper.

2. Prepare the Phyllo Sheets

  • Preheat oven to 375°F (190°C). Line a baking tray with parchment paper.
  • Cut phyllo sheets into rectangles (about 3×6 inches).
  • Brush one sheet lightly with melted butter/oil, stack another on top, brush again.

3. Assemble the Crisps

  • Place 1 tbsp spinach-feta filling at one end of the phyllo strip.
  • Fold like a triangle (like making samosas) until sealed.
  • Brush the outside with more butter/oil.

4. Bake

  • Place crisps on prepared tray.
  • Bake for 18–20 minutes, until golden and crisp.

5. Serve

  • Serve warm with a dipping sauce like tzatziki, hummus, or a light yogurt-garlic dip.
