Crispy Parmesan Zucchini Rounds Recipe

Ingredients (Serves 4)

  • 2 medium zucchinis, sliced into ¼-inch thick rounds
  • 2 tbsp olive oil
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (panko for extra crunch)
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning (or dried oregano/basil)
  • Salt & black pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions

1. Prep the Zucchini

  • Preheat oven to 425°F (220°C).
  • Line a baking sheet with parchment paper.
  • Pat zucchini slices dry with paper towels.

2. Season & Coat

  • In a bowl, mix Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  • Brush zucchini slices lightly with olive oil.
  • Press each slice into the Parmesan-breadcrumb mix to coat one side.

3. Bake

  • Arrange zucchini rounds on the baking sheet, coated side up.
  • Bake for 18–20 minutes, until golden and crispy.

4. Serve

  • Garnish with chopped parsley.
  • Serve warm with marinara, ranch, or garlic aioli for dipping.
