Chicken Noodle Stir-Fry

Ingredients (Serves 2–3)

  • 200 g (7 oz) noodles (egg noodles, rice noodles, or soba)
  • 2 chicken breasts (thinly sliced)
  • 2 tbsp soy sauce (low-sodium)
  • 1 tbsp oyster sauce (or hoisin for sweeter flavor)
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 2 garlic cloves (minced)
  • 1 onion (sliced)
  • 1 red bell pepper (sliced)
  • 1 carrot (julienned)
  • 1 small broccoli head (florets)
  • 2 green onions (sliced, for garnish)
  • Sesame seeds (optional, for topping)

Instructions

  1. Cook the noodles
    • Boil noodles according to package directions, drain, and toss with a little sesame oil to prevent sticking.
  2. Cook the chicken
    • Heat vegetable oil in a wok or large pan.
    • Add chicken strips and cook until golden and cooked through. Remove and set aside.
  3. Stir-fry the veggies
    • In the same pan, add garlic and onion. Stir for 1 minute.
    • Add carrot, bell pepper, and broccoli. Stir-fry for 3–4 minutes until tender-crisp.
  4. Combine & Sauce
    • Return chicken to the pan.
    • Add noodles, soy sauce, oyster sauce, and a drizzle of sesame oil.
    • Toss everything together for 2–3 minutes until coated and glossy.
  5. Serve
    • Garnish with green onions and sesame seeds.
    • Serve hot straight from the wok!
