Chicken Noodle Stir-Fry
Ingredients (Serves 2–3)
- 200 g (7 oz) noodles (egg noodles, rice noodles, or soba)
- 2 chicken breasts (thinly sliced)
- 2 tbsp soy sauce (low-sodium)
- 1 tbsp oyster sauce (or hoisin for sweeter flavor)
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- 2 garlic cloves (minced)
- 1 onion (sliced)
- 1 red bell pepper (sliced)
- 1 carrot (julienned)
- 1 small broccoli head (florets)
- 2 green onions (sliced, for garnish)
- Sesame seeds (optional, for topping)
Instructions
- Cook the noodles
- Boil noodles according to package directions, drain, and toss with a little sesame oil to prevent sticking.
- Cook the chicken
- Heat vegetable oil in a wok or large pan.
- Add chicken strips and cook until golden and cooked through. Remove and set aside.
- Stir-fry the veggies
- In the same pan, add garlic and onion. Stir for 1 minute.
- Add carrot, bell pepper, and broccoli. Stir-fry for 3–4 minutes until tender-crisp.
- Combine & Sauce
- Return chicken to the pan.
- Add noodles, soy sauce, oyster sauce, and a drizzle of sesame oil.
- Toss everything together for 2–3 minutes until coated and glossy.
- Serve
- Garnish with green onions and sesame seeds.
- Serve hot straight from the wok!
