Ingredients
For the Dough:
- 2 ½ cups (315 g) all-purpose flour
- 1 tsp salt
- 2 tbsp sugar
- 2 tsp instant yeast (or 1 packet)
- ¾ cup (180 ml) warm milk
- 2 tbsp butter, softened
- 1 egg (optional, for richer dough)
For the Filling:
- 1 cup (100 g) mozzarella cheese, cubed or shredded
- Optional: mix with cheddar or cream cheese for extra flavor
- Sprinkle of oregano or chili flakes (optional)
For Topping:
- 1 tbsp melted butter
- 1 tsp sesame seeds or parsley flakes
Instructions
1️⃣ Activate the Yeast (if using active dry yeast):
Mix warm milk, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
(Skip this if using instant yeast — you can mix it directly with flour.)
2️⃣ Make the Dough:
In a large bowl, combine flour and salt.
Add the yeast mixture, butter, and egg.
Knead for 8–10 minutes until the dough becomes smooth and elastic.
(You can use your hands or a mixer.)
3️⃣ Let It Rise:
Cover with a damp towel and let rise in a warm place for 1 hour or until doubled in size.
4️⃣ Prepare the Filling:
Cut mozzarella (or your cheese mix) into small cubes. Keep them chilled until ready to use — cold cheese is easier to stuff.
5️⃣ Shape the Buns:
Punch down the dough and divide into 8–10 equal pieces.
Flatten each piece slightly, place cheese in the center, and pinch the edges to seal well.
Shape into smooth balls.
6️⃣ Second Rise:
Place the buns on a parchment-lined baking sheet.
Cover and let rest for 20–30 minutes.
7️⃣ Bake:
Preheat oven to 375°F (190°C).
Brush the tops with melted butter and sprinkle sesame seeds (optional).
Bake for 15–18 minutes, until golden brown.
8️⃣ Finish & Serve:
Brush with more butter right after baking for that glossy, soft finish.
Serve warm — when you break it open, that melty cheese center is perfection!
Tips for Success
Seal the buns tightly so cheese doesn’t leak.
Use chilled cheese for easier stuffing.

Storage
- Store at room temp for 1 day, or refrigerate up to 3 days.
