Taco Ranch Bites

Ingredients (Makes ~24 Bites)

  • 1 lb (450 g) ground beef (or ground chicken/turkey)
  • 1 packet taco seasoning (or 2 tbsp homemade mix)
  • ½ cup water
  • ½ cup ranch dressing
  • 1 cup shredded cheddar cheese (or a blend of cheddar & Monterey Jack)
  • 2 tubes refrigerated crescent roll dough (or puff pastry sheets)
  • 2 green onions, chopped (for garnish)
  • Optional toppings: sour cream, salsa, diced tomatoes, jalapeños

Instructions

1. Cook the Taco Meat

  • In a skillet, cook ground beef over medium heat until browned.
  • Drain excess fat.
  • Stir in taco seasoning + water, simmer until thickened (about 3–4 minutes).

2. Prep the Dough

  • Preheat oven to 375°F (190°C).
  • Roll out crescent roll dough, cut into squares or keep as triangles.
  • Press each piece into a mini muffin tin to form little cups.

3. Assemble

  • Spoon a tablespoon of taco meat into each dough cup.
  • Drizzle with ranch dressing.
  • Sprinkle generously with shredded cheese.

4. Bake

  • Bake for 12–15 minutes, until golden brown and bubbly.

5. Finish & Serve

  • Remove from oven, let cool for 2–3 minutes.
  • Garnish with chopped green onions and any optional toppings.
  • Serve warm and watch them disappear!
