Crispy Parmesan Zucchini Rounds Recipe
Ingredients (Serves 4)
- 2 medium zucchinis, sliced into ¼-inch thick rounds
- 2 tbsp olive oil
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs (panko for extra crunch)
- ½ tsp garlic powder
- ½ tsp Italian seasoning (or dried oregano/basil)
- Salt & black pepper, to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions
1. Prep the Zucchini
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- Pat zucchini slices dry with paper towels.
2. Season & Coat
- In a bowl, mix Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
- Brush zucchini slices lightly with olive oil.
- Press each slice into the Parmesan-breadcrumb mix to coat one side.
3. Bake
- Arrange zucchini rounds on the baking sheet, coated side up.
- Bake for 18–20 minutes, until golden and crispy.
4. Serve
- Garnish with chopped parsley.
- Serve warm with marinara, ranch, or garlic aioli for dipping.
