Sweet & Tangy Pickled Red Onions

Ingredients (Makes 1 medium jar)

  • 2 medium red onions, thinly sliced
  • 1 cup apple cider vinegar (or white vinegar)
  • 1 cup water
  • 3 tbsp honey or sugar
  • 1 ½ tsp salt
  • ½ tsp whole black peppercorns (optional)
  • ½ tsp chili flakes (optional, for heat)

Instructions

  1. Prep the onions
    • Peel and thinly slice onions into rings or half-moons.
    • Pack into a clean glass jar.
  2. Make the brine
    • In a small saucepan, combine vinegar, water, honey/sugar, and salt.
    • Heat until dissolved and steaming (do not boil).
  3. Pickle
    • Pour hot brine over onions, making sure they are fully submerged.
    • Add peppercorns or chili flakes if desired.
    • Let cool, then seal the jar.
  4. Chill & Serve
    • Refrigerate for at least 1 hour (best flavor after 24 hours).
    • Keeps well for 2–3 weeks.
