Sweet & Tangy Pickled Red Onions
Ingredients (Makes 1 medium jar)
- 2 medium red onions, thinly sliced
- 1 cup apple cider vinegar (or white vinegar)
- 1 cup water
- 3 tbsp honey or sugar
- 1 ½ tsp salt
- ½ tsp whole black peppercorns (optional)
- ½ tsp chili flakes (optional, for heat)
Instructions
- Prep the onions
- Peel and thinly slice onions into rings or half-moons.
- Pack into a clean glass jar.
- Make the brine
- In a small saucepan, combine vinegar, water, honey/sugar, and salt.
- Heat until dissolved and steaming (do not boil).
- Pickle
- Pour hot brine over onions, making sure they are fully submerged.
- Add peppercorns or chili flakes if desired.
- Let cool, then seal the jar.
- Chill & Serve
- Refrigerate for at least 1 hour (best flavor after 24 hours).
- Keeps well for 2–3 weeks.
